Christmas Day 2011

Christmas is a big day for my family and we really go all out when it comes to celebrating! We’ve been really busy the past few days, shopping, cooking, baking, wrapping presents etc! I was up all the way to 4am baking with my mum!

Here are some of the wonderful goodies we made for our Christmas dinner with the whole family!

Tunnel of Fudge Chocolate Bundt Cake with Hazelnut Ganache

Another masterpiece that everyone loves! Comes with a tunnel of gooey and nutty fudge in the middle, hence the name! The cake itself turned out perfect this time with lots of fudge, but it could have been better if we used dark chocolate ganache instead of the hazelnut one which made the cake a little too sweet!

Strawberry and Coconut Bars

My mum whipped this up. It’s just a crust, followed by a layer of strawberry preserve and a generous topping of toasted desiccated coconut.

Spiced Carrot Cake with Orange Cream Cheese Frosting

My mum’s specialty. There’s nothing she makes better. This shall be our secret recipe! 🙂

Peanut Flour Cookies

They turned out exactly like the CNY cookies! They’re really nice and savoury compared to the sweetness of everything else we baked.

Very Gingery Ginger Cake

Not for everyone. I do like the first few bites of this cake. I love the spice but I can’t finish an entire piece as there’s too much flavour! I’m sure some people will love it (like my mum). Maybe the molasses is too sweet!

The highlight of the day: Honeyed Ham with Pears and Cranberries

This turn out fantastic! I was in charge of basting it every 30 minutes or so. I love the caramelized pears and cranberries. I’m not a big fan of ham but this recipe is to die for. My mum randomly picked this recipe because I left it open as  tab and she had thought that I had already chosen this recipe for the ham. Was a fluke, but what a great dish this was! I actually really do love baking and cooking. It’s really stress-relieving for me! As long as my mum isn’t shouting, I’m all good! Hahaha!

And here are all my lovely Christmas presents 😀

A leather Puma gym bag. Really oversized which is great for me! I can dump all my Muay Thai stuff in, including shoes too (if I wish to stink up the bag)! I can bring it to school when school reopens too. It’s big enough to fit my laptop, clothes and the likes on my gym days. AHHHH I LOVE IT!

A couple other lovely presents I received from the family:

A Guess clutch from Uncle Evan and Aunty Angel. I love it to death too! Look at the studs, the heart, the lazer cut design (:

This beautiful shift dress from Blum & Co. was my gift from Periamma and Uncle Kola! I love the leopard prints! I prefer leopard prints which are bigger so it doesn’t look too busy! I will probably alter it a little shorter, but other than that, the fit is just perfect! (: It also has an asymmetric pleated neckline and back which isn’t obvious in this photo but looks amazing in reality! I’m waiting for the someone to bring me somewhere special so I can wear this. Hehehe!

So, as you can imagine, I really overate last night! It was my cheat day and I ate anything and everything that I wanted. But I’m really not used to eating so much, let alone eating so much “junk” too! I ended up with a horrible tummy ache just hours after when I was on a walk and had to run home for the toilet. Haha!  This really reminds me why I eat healthily daily. It makes me feel good about myself and my body! I weighed myself nervously this morning (more like noon since I woke up at 12pm today) before breakfast as though I would have gained 5 pounds overnight from the “binge”. Strangely, I’m even lighter. 43.3kg this morning. HAHA! Amazing stuff.

Today’s back to my usual diet. YAY! (:

Going for my workout soon! The weather looks fine today. I shall go for a run and back for some resistance work. Maybe a walk with my mum and Milo (now my dog) after dinner too!
